For my dad's birthday I made slightly different cupcakes, but very delicious nevertheless! Because he loves raspberries and we're all fans of cheesecake I made - Raspberry Marble Cheesecakes!

For the second (or maybe third?) time they ran a photo competition in my hometown. It's a marketing tool for our area at the river "Lippe" and the photos may be used later by the town for promotion, etc. This year I joined with my mom as "assistant" because it sounded like a lot of fun - and it turned out to be much more difficult than expected! I tested another recipe, for Mocha cupcakes, which were delicious, especially that super creamy and fluffy "Seven-Minute-Frosting". As a little experiment we used a baking mix that is meant for a regular cake and put it into the cupcake wrappers instead. I had to tweak it alot, cause once the dough was baked it had risen so much that there wasn't enough space for the filling left. I had to dig holes into the little cakes before I could fill them. You can see that on the last photo.
The dough is similar to angel food, just a bit fluffier, the white filling is mainly yogurt, the orange cream is a apricot mousse. You can see, this was a much lighter version of any real cupcake (which my mum prefers a lot!), but it was also very fast and simple, since you don't have to add much to that baking mix. A nice last minute solution. I should try some other ones... (more...)
